The chef describes the menu as both national and international, with an emphasis on French techniques.
He has trained at the Western Culinary Institute in Portland and Le Cordon Bleu Culinary Arts, so that is likely to be some darn good dog food. The public relations director for the hotel is planning an exciting way to unveil the menu items when they're ready, which involves inviting local celebrities and their dogs to participate in a contest to judge which dishes prompt the most tail wagging.
